The process of marinating food before cooking is basically immersing food in a marinade (a spiced liquid mixture, usually of wine or vinegar & oil with spices and seasonings, or curd & spices as applicable to the preparation), to tenderize and flavor. This effectively leads to a virtually oilless cooking and less cooking time thereby influencing a healthy diet.
